我们于xx年7月份进入了张家口市解放军251医院，进行为期10个月的临床护理实践。临床的实习是对理论学习阶段的巩固和加强，也是对护理技能操作的培养与锻炼，同时也是我们就业前的最佳锻炼阶段。在这里我要感谢张家口市251医院给我提供了这样好的实习环境和各种优越的实习条件，也感谢所有的带教老师对我的关心照顾和辛勤指导，让我能在踏上工作岗位之前拥有如此好的锻炼自己的机会。

在医院实习的这段时间里，根据护理部的精心安排，我们分别外科.内科等几个科室轮流进行实习。

我实习的第一站是心内一科，在这里我们的实习时间是两个月，因为这是我实习的第一个科室，对此充满了好奇与期待。第一次走进病房的时候，脑子里是一片空白，一切看来都那么的新鲜。刚去的时候护士长给我们分别安排了带教老师，带教老师先带领我们熟悉了这里的环境，接着为我们讲解科室各项规章制度。刚开始的几天感觉仍是陌生和不解，因为是学生的身份，所以感觉就是站也不对，坐也不是。好在带教老师对我很好，什么事情都为我们讲解，有些事情也让我们去动手，慢慢的我们也熟悉了这里的程序。在这两月里，我们很认真的学习关于心脏方面的知识，了解科室的工作性质，熟悉每位病人的病理情况。在这两个月的实习期间，我已基本能够独自进行静脉输液。各种注射等基本护理操作。并学会了心电图的使用

第二个科室是神经外科，在这里实习，由于是学生，在累也不能当者护士长及科室的老师的面休息，感觉真的好累好累，全身都是酸痛，下班后回到住处倒床就是睡。身心具累。

刚进入外科病房，总有一种茫然的感觉但随着时间的脚步，环境已熟悉，学习也逐渐进入正规轨道，在各个科室的病房实习阶段，了解最多的是各种疾病及其常用的治疗药物，如药物的用法及用量。掌握各项护理的基本操作。

实习的最大及最终目的是培养良好的各项操作技能及提高各种护理工作能力。所以在带教老师“放手不放眼，放眼不放心”的带教原则下，我们积极努力的争取每一次的锻炼机会，如导尿.插胃管.床上插浴.口腔护理，静脉输液，肌肉注射等各种基础护理的操作。

我知道护士的工作是非常繁重与杂乱的，尽管在未入临床之前也有所感悟，但是真正进入病房后，感触又更深了。的确，护士的活很零碎，很杂乱，还可以说是很低微，可是透过多数人的不理解，我们发现，护士有着其独特的魅力。医院不可能没有护士，这就说明了护士的重要性。医生离不开护士，病人离不开护士，整个环境都离不开护士。这琐碎的工作，有着完整的体系，可谓“麻雀虽小，五脏俱全”，也正因如此，才能发挥其独到的作用，产生不可或缺的作用。因为有了临床的实习，我们才更全面而深刻的了解护理工作，更具体而详尽的了解这个行业。进入临床的第二个收获：正确认识护理，树立了正确的职业道德观，养成了良好的工作态度。

这个科室对于我来说是一个转折点。它让我学会了很多东西，让我知道，作为一名护士，不仅仅要学会最基础的扎针技术，也要会例如，导尿，灌肠，吸痰，鼻饲等等之类的很多东西。

散餐操作程序

(一)、散餐服务要求

1、了解当天供应品种(例汤、海鲜、时菜、甜品、水果、特别介绍、沽清类)。

2、备料：(酱油、胡椒粉、开水、点菜单、热巾、托盘等

(二)、开餐前的检查工作

1、参加班前例会，听从当日工作安排。

2、检查仪容仪表。

3、台面摆设：

餐具整齐，摆放统一，干净无缺口，台布、口布无破损，无污渍。

4、台椅的摆设：

椅子干净无尘，椅面无污渍，台椅横竖对齐或形成图案形。

5、工作台：

餐柜、托盘，摆设要求整齐统一，餐柜布置整齐无歪斜。

6、检查花草。

7、检查地面。

(三)、迎接客人

1、迎宾员当客人进入餐厅时，迎送员以鞠躬礼(30℃左右)

热情的征求客人：“欢迎光临先生/小姐，请问您几位?”

把客人带到坐位后，拉椅请坐，双手把菜谱递给客人，说道：“先生/小姐，这是我们的菜单”

语气亲切，使客人有得到特别尊重之感觉。

2、餐厅服务员

(1)站立迎宾

在开餐前的5分钟，在个自分管的岗位上等候开餐迎接客人，站立姿势要端正，不依靠任何物体，双脚不可交叉，双手自然交叠在腹前，仪态端庄，精神饱满。

(2)拉椅让座 *

服务员应协助迎送员安排客人就座，拉椅时留意先女宾，后男宾。

(四)餐中服务

从客人右边递巾，并说“先生/小姐，请用巾”。然后询问客人：“请问喜欢喝哪些茶?我们有花茶、乌龙……”。

在客人看过菜单片刻后，即上前微笑地询问：“先生/小姐，请问现在能够点菜吗?”

下订单时，第一联交收银员;第二联由收银员盖章后，交酒巴或由跑菜员交厨房，作为取酒水及菜的凭证;第三联由跑菜员划单用，此联能够留存。

10、用托盘将饮料酒水按订单上的桌号，准确的呈送给每一位客人。

11、第一道菜不能让客人久等，最多不超过10—15分钟，如时间稍长，要及时向客人说“对不起”表示歉意。如客人有急事，一定要与厨房联络，尽快出菜。

12、上菜时，应礼貌地向客人表示：“对不起，让您久等啦。”

13、上菜顺序：冷菜、热菜、主食或点心、甜食、水果。

各餐间在每上一道菜备餐间服务员应在第三联上注销一道菜。上台时留意报菜名。

14、上最后一道菜时，要主动告诉客人，“先生/小姐，您的菜已上齐”，并询问客人是否要增加些哪些。

15、菜上齐后，递甜品水果的介绍牌给客人，向客人介绍各类甜品、水果。

16、巡台：

⑴烟缸内有两个或两个以上烟头应立即撤换。

⑵将空菜碟、空汤碗及空酒瓶撤走。

⑶及时撤换骨碟。

⑷及时添加酒水、饮料等服务员应有求必应，有问必答，态度和蔼，语言亲切，服务周到，应在客人开口前满足客人的要求。随时留意客人动态，及时处理突发事件。

17、收撤菜碟餐具：

菜碟：先征得客人同意，才干收撤(除空碟外)当客人同意后，应在客人的右边逐样收撤(如需打包可在工作台进行)先收银器、玻璃器皿，后收餐具。

18、上热茶：

提供茶水服务(用盖碗茶)。

19、上甜品、水果 上甜品上水果：上水果前应视水果品种，派骨碟、刀、叉、小匙羹等。(刀在右，叉在左)

20、递上小毛巾 `

21、结帐：结帐时用结帐夹，在客人右边、礼貌的说：“谢谢，先生/小姐总共元”留意收款和找零时应唱收唱付，钱款当面点清。

22、拉椅送客：

向客人道谢，送客人至餐厅门口，并欢迎再次光临，提醒客人不要在餐厅遗漏物品。

(五)餐后检查收尾工作

1、客人走后，应及时检查是否有燃烧的烟头，是否有遗留物品。

2、收撤餐具：

(1)首先整理好餐椅，以保持餐厅整洁、统一的格调。

(2)先收餐巾、小毛巾，再收银器、玻璃器皿，餐具。

3、清理现场重新布置环境，恢复餐厅原样

4、备餐具：

服务进程中，尽可能可以称呼客人的姓。

备餐间工作规范：

1、餐前准备：

(1)按要求着装，按时到岗，并接受领班的工作指派。

(2)领取餐具、用具、各种调料和调味品，准备好洁净的餐车和干净的抹布。

(3)把米饭盛入干净的保温饭桶内。

(4)准备好开餐用的银餐具。

(5)准备好干净的垃圾桶。

(6)保证走菜通道的畅通、地面不潮湿、不油滑。

(7)准时参加餐前会，啦解工作内容。

2、餐中服务

(1)一切就绪后，站在自己的岗位上，等候订单。

(2)接单后，按照前台时间的要求，迅速将订单送至厨房相关点(冷菜间、热菜厨房、面点房、水果房等)按照先后顺序进行传菜服务。

(3)跑菜要迅速，防止菜冷。对几个不符合质量和规格要求的菜点，应向厨师长反映(如菜凉啦、装盘不好、颜色不好等)

(4)每跑一道菜，要在订单上注销这道菜，对走完的订单要复核一遍，避免出差错。

(5)将每道菜迅速，准确无误地送到餐桌前

(6)协助服务员撤换餐具，整理酒瓶，添加茶水，并保持跑菜台整齐清洁。

3、收尾工作

(1)将用过的餐具刮清残菜，分类叠放整齐，将各类饮料杯、水杯、酒杯分类倒置放入筐架栏内，将各类银餐具分类排放好，急需的运往洗涤间洗涤消毒，将不锈钢餐具、筷子、筷架分类放入筐中，送洗涤间清洗后立即取回擦净并放在规定的方面妥善保存。

(2)将各类台布、小毛巾、口布等布草抖净杂物，并整齐扎放好、点数后，填写清洗单送布草房清洗，并按领取数将干净的棉织品领回交给领班。

(3)打扫后台卫生、地面、开水炉、水池、工作台、工作柜，米饭保温桶要保持光亮。

(4)清理小库房，各样物品摆放整齐。

(5)垃圾桶清倒后，清洗干净放回原处。

5、查看宴会场地的安排情况，抄写菜单，报送相关部门。

6、核查次日团队用餐更改情况，如有更改，及时通知相关部门。

1、轮流去餐厅用晚餐。

2、分别整理好次日离店和即将到店的团队通知单。

3、核对次日离店表，留意有无提前用早餐和带饭盒的要求。

4、填写次日宴会报表，宴会通知单，报表和相关通知。

一、宴会部服务程序：

(一)宴会布局：

1、根据餐厅方式和大小安排，桌与桌之间距离适当，以方便穿行上菜，斟酒水为宜，合理布局。

2、主桌应放在面向餐厅主门，可以纵观全厅的位置。

3、主桌的大小，应根据就餐人数来确信。

4、重点突出主台。

(二)摆位规格：

1、台的正中放上转盘，花盆摆在转盘正中。

2、首要的宴会应在台当中摆设花草或红绒布、抽纱;台中适当位置放上蜡台(以正副主人面向为准两侧中心位置)等其他饰物，台边围上台裙

3、装饰碟离桌边2cm。

4、筷子尾部与骨碟平行，筷子架与味碟平行。

5、小碗与味碟之间直对装饰碟中线，汤匙向左方，与味碟中线成直线。

6、餐花放在骨碟上。

7、甜酒杯对装饰碟中线，饮料杯放在甜酒杯左边，烈酒杯放在甜酒杯右边，三杯成直线，杯底距离为1.5 cm，如客人要求饮其他洋酒，即换适当的酒杯。

8、每桌放四个烟灰盅，成十字形，其中两个分别放在正副主人位右边。

9、每桌放四个牙签盅，成十字形，分别间隔于四个烟灰盅。

10、各位位置摆放距离相等。

11、菜单统一放在正副主位前。

(三)仪表仪容

1、头发整齐、不零乱，如服务员头发不披肩，戴统一头饰，男服务头发不得过耳，后发基线不过衣领。

2、按饭店要求进行着装，清洁笔挺、皮鞋擦亮，袜子无破损。

3、女服务员上岗一律淡妆，上岗时间不能配戴饰物，不喷洒过浓的香水。

(四)准备工作

1、根据宴会预订单，啦解清楚接待对象、宴会名称、国籍、身份、生活习惯、人数、宴会时间及有何特殊要求。

2、按宴会摆台要求摆设餐位。

3、将领来的餐具逐项检查，确保清洁，光亮、无缺口。

4、准备足够数量的小毛巾，并叠好放毛巾柜中备用。

5、根据不同的要求和人数，准备足够数量的饮料、调料、水果、干果、火柴、香烟，赠送客人的小礼品应整齐摆放在规定位置上，各种饮料要冷藏，白葡萄酒用冰筒盛装，白兰地、威士忌应备足冰桶和冰块，加饭酒要准备暖壶和加饭酒酒杯。

6、准时参加班前会议。

7、宴会前10—15分钟重新检查自己的台面，整理好自己的仪表仪容，不符合要求的，尽快纠正(要求制服整齐挺括，仪表端庄大方，精神饱满)，首要宴会要戴白手套。

8、宴会即将开始前，上冷盆、上调料，上冷菜时留意按颜色深浅荦素搭配好，均匀的摆放在转台上。

9、大型宴会提前十分钟斟上甜酒。

10、站在指定位置上，恭候客人的光临。

(五)迎接客人 ，

1、站立厅房门口恭迎客人，多台宴会应按指定位置站台，不得交头接耳及倚靠而立。

2、客人进入餐厅时，微笑迎客，根据客人不同的身份和年龄，使用敬语，主动问候，同时拉椅请客人入座，上小毛巾。

3、如客人早到或事先已约好会客，可请客人在休息座休息，为客人及时送上迎客茶。

4、如客人宴请人数有增减时，增撤餐具和食品应使用托盘进行，同时，通知厨房，增减食品数量。

(六)席间服务

1、宾客入席后，马上帮客人落中，撤筷套。

2、酒水服务：

(1)为客人斟酒前要先征求客人意见，通常斟入杯子的八分满为宜，斟白酒和色酒时，应先斟色酒，后斟白酒，客人表示不需要某种酒时，应把空杯撤走，斟白兰地或威士忌时，只斟杯子的一至二分，客人需要冰块时，应连同冰夹及时提供。

(2)斟酒水从主宾开始按顺时针方向，并遵循先主宾后主人，先女宾后男宾的原则逐位斟。-

(3)如果宾主致词时，全体服务员应立即停止服务，保持场内安静，同时留意客人杯中是否有酒，当客人起立敬酒时，应迅速拿来起酒瓶准备为客人添酒，如大型宴会主宾致词时，应用托盘备好一至二杯甜酒，在致词完毕需要敬酒时送上。

(4)当客人起立干杯或敬酒时，应帮助客人拉椅，客人就座时，再把椅子向前推，要留意客人的安全。

3、上菜服务：

(1)按顺序上菜，先冷菜、后热菜，汤、饭点、甜食、水果、热菜要热，冷菜要冷，不同烹制办法的菜，要用不同的餐具，大型宴会或首要宴会，要有专人指挥，以免造成早上、迟上、漏上，影响整个宴会效果。

(2)上菜时要先搬走旧菜，在征得客人同意后方可撤走，撤换骨碟时也要征询意见，如客人表示还应该用，上的新菜可先放在客人右边，等客人的旧菜用完时，撤走空碟，再把新菜移至客人面前。

(3)每上一道新菜时，要口齿清楚地报出菜名，如席上分菜，在上菜前搬去鲜花，在没菜或上完后再送上鲜花。

(4)分菜时要胆大心细，动作快，做到份量、件数均匀，干净利落，凡是鸡鸭鱼类等有造型及花色菜，上菜时以主人面向为主，头前尾后，背外腹里摆在规定位置上。

(5)所上菜肴，遇有佐料的，应先上佐料后上菜。

(6)上菜时要先主宾，然后按顺时针方向进行，如有女宾，应先女宾后男宾按顺序上菜。

(7)上完点心后，撤走调味碟、勺子、筷子、筷架、毛巾碟。

(8)上完甜食后，送上茶水，并把牙签盅移至转台上，并示意客人。

(9)根据不同的水果，为客人提供刀、叉或勺子，上第二道小毛巾，上水果盘。

(10)用完水果后，擦净转台，重新摆上鲜花，以示宴会结束，同时为客人不断添加茶水。

(11)整个宴会期间，根据客人要求，上菜不可太快，通常宴会时间从开始到结束约

4、如客人的筷子、口布等掉在地上，应立即给客人换上干净的，把脏的拿走。

5、宴会进程中，若客人碰翻啦茶杯，饮料杯等，弄脏啦台面或客人的衣服，要迅速用口布或小毛巾帮助客人擦试，掉在台面上的菜点可用牙签或筷子夹到碟子里拿走，用干净的口布铺在餐桌弄脏的部分。

6、烟灰缸里的烟头不得超过三个，发现一个时就要用干净的烟缸盖住脏的烟缸撤走，然后将近干净的放上。

7、如客人订白灼虾、蟹等直接用手进食的菜肴，应及时为客人准备洗手盅。

8、有急事或电话需要找客人，应找主办宴会单位的人联系。

(七)结帐及送客

1、清点酒水、香烟、水果、核对宴会人数，标准，加上陪同和驾驶员的工作餐费，累计总数为客人结帐。

2、付帐时，若是现金能够现收交收款员;若是住店客人签单，要核对住房卡，请客人答名后交收款员。如果是单位宴请，签单时，核对签单人的单位工作证，然后将帐单交收款员，找回零钱，应连同帐单票据，用收银夹一同呈送给客人，并向客人表示感谢，然后收回收银夹，退回一步再转身。

3、当客人提出宴会结束时，要提醒客人带好携带来的物品，并将保管的物品交给客人，拉椅送客，遵循迎客走在前，送客走在后的原则，热情的欢送客人。

(八)收台、清扫进程 `

1、检查桌子及地面有无客人遗留的物品，拾到后及时还给客人，无法追送时，应交餐厅领班及主管处理。

2、检查地毯、台布、椅面上有无燃着的烟头。

3、将口布、毛巾、杯具、餐具、银餐具等顺序分类收拾，垒放整齐送到餐务组洗涤，防止因摩擦和摆放不当而打碎，银餐具要进行清点，做到无缺少。

4、将剩余酒水如数退还给吧台，办好领退手续。

5、清理现场，布好餐台，铺上台布，擦净转台、地毯吸尘。
